Uncle Ray's Chicken and Rice brings you the heartwarming taste of Hainanese chicken rice, a dish steeped in history. Our roots trace back to the original creators in Singapore, ensuring an authentic and memorable dining experience for all food enthusiasts.
Chicken rice is considered one of the national dishes of Singapore and a major part of our hawker Centre culture. a whole chicken is poached in boiling water, and the resulting broth is skimmed with pandan leaf and lemon grass, producing the special flavored rice. Bite Sized pieces of the chicken is then served with this fragrant rice and a complementary sauce. There are variations such as steamed chicken and roasted chicken
Owner Chef Raymond Kiang, is the son of the pioneer chef, Sergeant Kiang of Mandarin Hotels Chatterbox which is well known for its boneless chicken rice back in the days and a pioneer in the chicken rice business for over 53 years now. Following his father’s footsteps, Mr Kiang strives to continuously serve only top-quality food in hopes of providing every customer with a fond memory of Hainanese food culture, history and tradition.
